Chocolate Fudge Gelatin Squares

The name speaks for itself on this one... Fudge Gelatin. All the chocolatey goodness of fudge but with the light airy feel, this dessert treat won’t weigh you down!

Ingredients

  • 1/2 cup cold or room temperature water
  • 3 tablespoons Great Lakes Culinary Gelatin
  • 1 cup coconut oil, melted
  • 1 cup good quality unsweetened cocoa powder
  • 1/2 cup honey
  • 1 tablespoon vanilla extract
  • 1-1/4 cups simmering water

Directions

  • Line an 8x8-inch baking dish with parchment paper.
  • Place the 1/2 cup cold or room temperature water in a bowl and sprinkle with the gelatin. Set aside for 5-10 minutes.
  • Transfer the gelatin to a blender. Add the coconut oil, cocoa powder, honey, and vanilla.
  • Pour in the simmering water and blend on high for 25-30 seconds until completely smooth. (Use caution when pureeing hot liquids.)
  • Pour into the parchment-lined pan. Carefully transfer to the refrigerator.
  • Chill for 2-4 hours until set. Cut into squares.
  • Store in an airtight container in the refrigerator or freezer.
