If you love salty-sweet treats with a healthy twist, these Caramel Pretzel Bars will hit the spot!
Ingredients
Base:
- 1 ¼ cups rolled oats
- ¼ cup tapioca flour
- 1 cup cashew butter
- ¼ cup honey
Date Caramel Layer:
- 12 medjool dates, pitted
- 2 scoops Great Lakes Wellness Daily Joint Caramel Collagen
- ⅓ cup cashew butter
- 2 tbsp honey
- 2-4 tbsp warm water
- ¼ cup Walnuts, crushed
Chocolate Topping:
- 1 cup dark chocolate chips
- 1 tsp coconut oil
- Pretzels, handful
Directions
Serves 16; Serving Size: 1 Bar
Place all the base ingredients into a food processor and pulse until a dough forms. Press the dough evenly into the bottom of an 8x8 inch pan lined with parchment paper.
Wipe out the food processor and then add the caramel ingredients (minus the water). Pulse until well blended. You will need to stop and scrape the sides from time to time. Once blended, add in 2 tablespoons of water and blend to combine. You want the date caramel to be a spreadable consistency, so add more water if the caramel is too stiff.
Spread the caramel over the base layer and top with crushed walnuts.
Melt the chocolate and coconut oil in a microwave safe dish for 40 seconds. Stir until smooth. Pour the chocolate over the caramel layer and spread to the edges. Top with pretzel pieces. Chill until chocolate is set. Cut into bars and serve.
