These waffles are super easy to make and have a light and fluffy texture that crisps up nicely. It’s also a great way to use up some any berries that are about to turn and would make the perfect breakfast (or dinner) in bed treat (we won’t judge) 😉 By @freshlydafna

Ingredients
- ½ cup milk of choice
- 2 eggs, whisked
- ¾ cup GF 1:1 flour or all-purpose flour
- 4 tbsp Great Lakes Mixed Berry Collagen
- 1 tbsp coconut sugar
- ½ tsp baking powder
- ¼ tsp baking soda
- dash sea salt
- ¼ cup fresh berries
Directions
- In a medium mixing bowl or in a measuring cup with a spout whisk together the milk and eggs until bubbly and well mixed.
- Add in all remaining ingredients (except berries) and stir together until just fully incorporated.
- Gently fold in the berries.
- Heat waffle iron according to instructions and pour half the batter into the waffle iron and cook for about 3-5 minutes or until waffle is lightly browned and fluffy.
- Repeat with remaining batter.
- Serve with additional berries and some maple syrup!
